🥩 Garlic Butter Steak Bites

Ingredients:

  • 1.5 lbs sirloin, ribeye, or strip steak, cut into 1-inch cubes
  • Salt & pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • Optional: crushed red pepper or a splash of lemon juice

 

Instructions:

1.Prep Steak:

  • Pat steak dry. Season generously with salt and pepper.

2.Sear in Batches:

  • Heat olive oil in a large skillet (preferably cast iron) over high heat.
  • Sear steak bites for about 1–1.5 minutes per side, working in batches to avoid overcrowding. Don’t overcook — medium-rare to medium is ideal.
  • Remove to a plate and keep warm.

3.Make Garlic Butter:

  • Lower heat to medium. Add butter and garlic to the same skillet.
  • Cook until fragrant (about 30 seconds).
  • Return steak bites to the skillet, toss to coat in garlic butter.
  • Finish with chopped parsley and serve.

 

🧀 Cheesy Smashed Potatoes

Ingredients:

  • 1.5 lbs baby potatoes (Yukon gold or red)
  • 2 tbsp olive oil
  • 2 tbsp melted butter (optional, for flavor)
  • 1 tsp garlic powder or minced garlic
  • Salt & pepper, to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or blend)
  • Optional: chopped chives, bacon bits, or sour cream for topping
