Ricotta Meatballs
Ingredients
* 1 lb ground beef (or a mix of beef and pork/veal)
* 1 cup ricotta cheese
* ½ cup grated Parmesan cheese
* 1 cup breadcrumbs (Italian-style or plain with herbs added)
* 2 large eggs
* 3 cloves garlic, minced
* ¼ cup fresh parsley, chopped (or 2 tsp dried)
* 1 tsp salt
* ½ tsp black pepper
* ½ tsp red pepper flakes (optional)
* 1 tsp dried oregano or Italian seasoning
* Olive oil (for frying or baking)
* 3 cups marinara sauce (homemade or store-bought)

Instructions
1. **Mix the meatball mixture**
* In a large bowl, combine ground meat, ricotta, Parmesan, breadcrumbs, eggs, garlic, parsley, salt, pepper, and oregano.
* Gently mix until just combined (do not overwork or they’ll be tough).
